Sexy No-Bake Chocolate Cream Pie

This pie was so easy to make, but it looks so sexy.  Seriously, it is no-bake and takes like 15 minutes to pull together, but it looks straight-up like a Bon Appetit creation.  It’s too bad I really suck at taking food pictures.  I didn’t do it justice.  In all fairness, taking pictures of a yummy pie with two toddlers is near impossible.  It went something like this:


I will confess, I ate a bunch of it while I made it, too.  It’s the best part about cooking, anyway.

This idea came to me a few years back when my mother-in-law made an avocado chocolate pudding for a family dinner. She had everyone try it (picky kids included) and guess what it was made from.  I would have never guessed avocado was the secret ingredient!  Avocados in your pudding?  Weird.  I know. But it is so stinking good.

This pie is pretty darn guilt free, to boot.  The walnuts have loads of healthy fats…Omega 3s, baby. The avocados are super nutrient-rich.   The cocoa is a super-food.  I mean, it is really hard to go wrong here.  You can omit the whipped cream or make a coconut whipped cream if you have dairy intolerance.

This chocolate cream pie is gluten-free, and paleo and vegan if you make it with coconut whipped cream.  It is really decadent.  It would be great to serve at a party.  All like, “Oh, really, it was nothing,” as you inspect your manicure.



For the filling–

4 medium avocados

4 TBSP cocoa powder (unsweetened)

1/3 cup maple syrup or honey

1/2 tsp. salt


For the crust–

15 dates

1/2 tsp. salt

3 cups walnuts

2 tsp. vanilla

1 TBSP chia seeds + 3 TBSP water

1 TBSP coconut oil


For the topping–

1 cup whipping cream

1 tsp. vanilla

1 TBSP honey

Chocolate (optional)



In a small bowl, mix 1 TBSP of chia seeds with 3 TBSP water.  This will create an “egg” for your crust. Let sit while you prepare the filling.  In food processor, or with emulsifier, mix the avocados, cocoa, sweetener and salt until completely blended.  Set to the side.

In food processor, blend dates, walnuts and salt until finely ground.  Then add your chia seed egg creation,  coconut oil, and vanilla.  Pulse until blended.  It should pull together like a ball inside the food processor.  Press into pie pan.

Add the chocolate filling.

Use mixer to mix whipped cream, honey and vanilla until peaks form.  Place on top of the cake.  Melt chocolate and then drizzle on top.

Tell yourself you are a bad-ass, and eat some sexy, healthy pie.
