Hello veggies! Make a salad super special with a rainbow of colors disguised as vegetables. Add the fresh orange dressing and you have an amazing salad side dish for any meal.

Ingredients

For the Orange Vinaigrette:

3/4 cup Olive Oil
2 tablespoons Apple Cider Vinegar
1 orange Orange Juice
1 teaspoon Orange Zest
1/2 Shallot
to taste Salt and Pepper

For the Salad:

8-12 ounces Lettuce of Choice
1 cup Cherry Tomato
2 Carrots (thinly sliced)
6 small Radishes
1 small Red Bell Pepper
1 Avocado (chopped)
1 Cucumber (thinly sliced or spiralized)
1 cup Cabbage (shredded purple)
handful Cilantro (chopped)
Alternative(s):
handful Fresh Parsley (chopped)

Preparation

Step 1

Prepare dressing by adding everything except salt and pepper to a glass jar.

Step 2

Mix until incorporated.

Step 3

Add salt and pepper to taste.

Step 4

To assemble salad, add salad greens to bowl. Arrange vegetables in rainbow order or just throw them in and mix.

Step 5

Drizzle orange vinaigrette dressing and serve.
