I love a sheet pan dinner that includes ALL of my ingredients on one pan! This salmon recipe is such a fun way to spice up your salmon. Bonus that it is a healthy fish option high in Omega 3 fatty acids that help with inflammation!! The added veggie and potato make this a well rounded meal that everyone will love.

Ingredients

1 1/2 Lbs Salmon (Cut Into 4 (6 Oz) Portions)
4 Tbsp Unsalted Butter (Softened Or Slightly Melted)
4 Tbsp White Miso
1 tsp Garlic (Minced)
1 Lb Asparagus (Ends Trimmed)
2 Large Sweet Potatoes (About 5 Cups Diced Small)
1/2 tsp Salt
2 Tbsp Coconut Oil (Melted)
1 Tbsp Sesame Seeds (For Garnish)

Ingredients

1 1/2 Lbs Salmon (Cut Into 4 (6 Oz) Portions)
4 Tbsp Unsalted Butter (Softened Or Slightly Melted)
4 Tbsp White Miso
1 tsp Garlic (Minced)
1 Lb Asparagus (Ends Trimmed)
2 Large Sweet Potatoes (About 5 Cups Diced Small)
1/2 tsp Salt
2 Tbsp Coconut Oil (Melted)
1 Tbsp Sesame Seeds (For Garnish)

Preparation

Step 1

Preheat oven to 425°F. Line two sheet pans with parchment paper.

Step 2

Combine butter, miso, and garlic in a small bowl and mix with a rubber spatula until it is well combined.

Step 3

Place the sweet potatoes on one sheet pan and drizzle with 2 Tbsp melted coconut oil. Toss to coat the sweet potatoes in the oil.

Step 4

On the second sheet pan, place the salmon on one side and the asparagus on the other side. Spread the miso butter mixture over the top and sides of the salmon as well as on the asparagus. Leave little dollops of the miso-butter mixture all over the tops of the asparagus so it melts as it cooks.

Step 5

Place both sheet pans in the oven.

Step 6

After 10 minutes, check the salmon and asparagus. If the salmon is cooked through, remove the sheet pan.

Step 7

Continue cooking the sweet potatoes for 10 more minutes or until tender and golden.

Step 8

Remove from the oven and serve.
