Cauliflower Fried Rice
About this Recipe
For convenience, grab pre-riced cauliflower or frozen cauliflower rice. Or, if you're feeling ambitious, grab a fresh head of cauliflower and chop it in a food processor until it’s rice-sized. Add in a pound of shrimp or cubed/shredded chicken for an extra protein boost!

Preparation
Step 1
Chop all of the vegetables and set aside.
Step 2
For the stir fry, add 1 Tbsp of water to a frying pan and cook cauliflower rice until just tender (about 3-4 minutes). Set aside. Using the same pan, fry the vegetables of choice using 1 Tbsp of cooking oil. Cook until the vegetables just begin to soften (about 2-3 minutes). Combine the cauliflower rice and vegetables.
Step 3
Fry the eggs in butter and incorporate into the cauliflower rice mix.
Step 4
Add Tamari sauce or coconut aminos and mix until well incorporated.
Step 5
Heat the edamame if desired and add to the mix. Add fresh scallions for crunch and garnish.
