1 Lb Cod Fillets (4 Fillets)

2 Cups Grape Tomatoes (Halved)
1/4 Cup Green Olives (Sliced)
1 Lemon (Zest & 2 Tbsp Freshly Squeezed Juice)
2 Cloves Garlic (Minced)

1 Lb Cod Fillets (4 Fillets)

Preparation

Step 1

Preheat the oven to 375°F.

Step 2

Tear off 4 sheets of parchment paper – about 14-inches each. Make sure the pieces of parchment paper are large enough to allow for plenty of space to roll the paper for a tight seal.

Step 3

Toss the tomatoes, olives, lemon juice and zest, salt, and pepper in a medium mixing bowl. Set aside.

Step 4

Place the cod on a plate or cutting board. Pat dry with paper towels (or a clean cloth towel). Rub olive oil into the fish and season both sides with salt and pepper. 

Step 5

Place one fillet (skin side down for best flavor absorption) and 1/4 of the vegetables on each piece of parchment. Seal the packets by rolling the parchment as shown in the photo.

Step 6

Bake in the preheated oven until done (about 15 minutes) and let sit. To avoid overcooking the fish, open the packets to allow the steam to escape, or serve it right away.

Step 7

Serve with extra lemon juice over rice or potatoes, if desired.
