Ingredients

3 Cups Cooked Quinoa
1/2 cup, crumbled Goat Cheese
1, diced Sweet Onion
1, diced Bell Pepper
1, diced Cucumber
1/4 cup Dried Cranberries
Alternative(s):
Raisins
Dried Cherries
1/4 cup, chopped Fresh Parsley
3 TBSP Lemon Juice

Preparation

Step 1

Cook the quinoa.

Step 2

While quinoa cools, dice the veggies.

Step 3

Toss all ingredients in a bowl and top with lemon juice; mix to combine.

Step 4 (Optional)

You can also top with protein of choice, or serve drizzled with Greek Yogurt Honey Mustard dressing.

Step 5

Note: If you are preparing this for a main dish then it produces about 4 servings. If you use this as a side salad then it will serve about 6.
