6 Chicken Thighs
1 TBSP Avocado Oil
1/2 cup Chicken Broth
2 cloves Garlic (minced)
1/4 cup Honey
2 TBSP Dijon Mustard
3 TBSP Whole Grain Mustard
1 pound Baby Potatoes (halved)
3 Carrots (peeled and cut into 2 inch pieces)
Salt and Pepper (to taste)

Preparation

Step 1

Select the ‘saute’ function on your instant pot and heat the oil. Season and brown the chicken, starting with skin side down.

Step 2

Add broth to pan to deglaze, scraping any bits off the bottom with wooden spoon. Turn off saute function.

Step 3

Add remaining ingredients, season with salt and pepper, and close the lid with valve sealed. Cook on high pressure for 8 minutes.

Step 4

Manually release the steam and enjoy with additional veggie or salad!
