About this Recipe

Packed with lots of vegetables this is an easy one stop shop for dinner. You can use a pressure cooker/instant pot or a traditional slow cooker/crock pot. With lean protein, this dinner will certainly leave you satisfied!

Ingredients

2 tablespoons Olive Oil
1 Yellow Onion (diced)
1 Bell Pepper (diced)
3-4 cloves Garlic
1 tablespoon Chili Powder
1/2 tablespoon Cumin
1/2 tablespoon Smoked Paprika
1/2 tablespoon Garlic Powder
1/4 teaspoon Cayenne Pepper (optional, more or less depending on spice preference)
1 pound Ground Turkey
1 Zucchini (large, diced)
1 cup Chicken Broth (can also use beef broth, vegetable broth, or water)
1 tablespoon Cocoa Powder
1 cup Corn (frozen or fresh)
15 oz. Black Beans (canned, drained and rinsed)
15 oz. Canned Crushed Tomatoes
Salt and Pepper
Sour Cream
Cheddar Cheese
Avocados
Red Onions
Cilantro

Preparation

Step 1

In a large skillet over medium-high heat, saute the onion and bell pepper in 2 tablespoons olive oil until softened. 3-5 minutes.
If you are using an instant pot, you can do these next few steps on the “saute” setting.

Step 2

Add the garlic and all the spices and stir to coat. Cook for about 1 minute.

Step 3

Add the turkey and break apart. Cook until if it fully cooked and browned.

Step 4

Transfer everything from the skillet to the slow cooker (or simply leave all ingredients in the instant pot and turn the saute setting off).

Step 5

Add the zucchini, broth, cocoa powder, corn, black beans, crushed tomatoes, 1 teaspoon salt, and 1/2 teaspoon pepper. Stir.

Step 6

For slow cooker – Cook on low for 7-8 hours or on high for 3-4 hours. Serve with toppings of your choice.
For Instant Pot – Cover and seal the instant pot and set to “manual, high” for 20 minutes. Once countdown is done, allow for natural pressure release for 10 minutes, then finish with quick release. Serve with toppings of your choice.
