One Pot White Chicken Chili

Gotta love a good white chicken chili. This one does not include beans... my kids hate them... but feel free to add if that is your style! This is a super healthy recipe full of veggies and chicken -- it cookes fast and all in ONE PAN. So, it's a winner no matter how you slice it.

Ingredients

3 medium Bell Peppers (diced)
2 medium Sweet Onions (diced)
2 medium Zucchini (chopped)
5 cloves Garlic (minced)
1 tablespoon Cumin
2 small 8oz cans Chopped Green Chiles
400 grams - half a huge can Green enchilada sauce
1.25 pounds Rotisserie Chicken (shredded)
3 cups Chicken Stock
1/4 cup Greek yogurt cream cheese
1 cup Corn
to taste Salt and Pepper

Ingredients

3 medium Bell Peppers (diced)

Preparation

Step 1

Spray a large pot with cooking spray and heat over medium-high heat.

Step 2

Add peppers, onions, and zucchini – sprinkle with a hefty pinch of salt and cook until soft — about 7 minutes.

Step 3

Stir in garlic and cumin and saute for a few more minutes. Add green chilis, green enchilada sauce, chicken stock and chicken. Sprinkle some salt on the chicken, turn the heat to low and simmer for about 15 minutes or until you’re ready to eat.

Step 4

Stir in greek yogurt cream cheese and corn and simmer for 5 more minutes just until corn is no longer frozen.

Step 5 (Optional)

Top individual bowls with sour cream, avocado, cheese, fresh cilantro, a squeeze of lime, and tortilla chips.
