3 Lbs Chicken Thighs (Boneless, Skinless, & Cut Into Thin Strips)
1 Tbsp Adobo Seasoning
2 tsp Ground Cumin
2 tsp Smoked Paprika
1 tsp Salt
4 Cloves Garlic (Minced on Microplane or Grater/Zester)
3 Tbsp Olive Oil
2 Red Bell Peppers (Cut into 1/4 inch Strips)
2 Yellow Bell Peppers (Cut into 1/4 inch Strips)
1 Red Onion (Cut into 1/4 inch Strips)
1 Lime (1 Tbsp Freshly Squeezed Juice)
1 Orange (1 Tbsp Freshly Squeezed Juice)
2 Tbsp Cilantro (Chopped Fresh Leaves)
10 Flour Tortillas (8 inch Warmed)

Preparation

Step 1

Preheat oven to 425°F. Line a sheet pan with parchment paper and lightly oil it.

Step 2

In a large bowl, combine adobo seasoning, cumin, paprika, salt, minced garlic and oil.

Step 3

Place chicken strips in the bowl and gently toss to combine. Add the peppers and onions and mix just until everything is incorporated. (This way the chicken gets most of the seasoning.)

Step 4

Spread the chicken, onions and peppers onto the sheet pan and bake for 15 minutes, or until the chicken is completely cooked through and the vegetables are tender.

Step 5

Garnish with lime juice, orange juice and cilantro.

Step 6

Serve with tortillas and toppings of your choice.
