Preparation
Step 1
To Make Glaze:
Combine balsamic vinegar, chicken stock, honey, dijon mustard, rosemary and garlic in a medium saucepan. Heat over medium high heat and bring to a boil. Then reduce heat and simmer over low heat until sauce has thickened and reduced to about 1/3 cup. This usually takes about 10-15 minutes. Remove from heat and pour through a fine strainer into a heat proof dish. At this point you can set this aside while you cook the salmon or store in refrigerator until its time to cook your meal.
Step 2
To cook salmon:
Season both sides of salmon with salt and pepper. Heat oil in a 12″ non-stick skillet over medium-high heat. Add salmon fillets and cook without moving until salmon has browned on the bottom. This takes about 4 minutes. Flip salmon to opposite side and continue to cook about 3 minutes until it has cooked through.
Step 3
When serving:
Drizzle each piece of salmon with glaze and garnish with finely minced rosemary if desired.
