1 Cup Almond Milk

1 Cup Milk of Choice
1/2 Cup Water
1 Large Carrot (1/2 Cup Shredded)
3/4 Cup Old Fashioned Oats
2 Tbsp Raisins
1 tsp Cinnamon
1/4 tsp Ground Ginger
1/8 tsp Ground Nutmeg
1/8 tsp Salt
2 Tbsp Maple Syrup
Walnuts (Chopped & For Topping)
Shredded Coconut (For Topping)

1 Cup Almond Milk

1/2 Cup Water
1 Large Carrot (1/2 Cup Shredded)

1 tsp Cinnamon
1/4 tsp Ground Ginger

Preparation

Step 1

In a small saucepan over high heat, add the almond milk, water, and carrots. Bring the liquid to a boil, so the carrots will start to soften. 

Step 2

When the liquid is boiling, add in the oats, raisins, cinnamon, ginger, nutmeg, and salt. Lower the heat to a gentle simmer. Cook, stirring frequently, until the oats are tender, about 5 minutes. 

Step 3

Once the oats are tender, stir in the maple syrup. For thicker oatmeal, let the oats cook for another minute or two. To thin the oatmeal, add in an extra splash of milk. Serve warm, with any extra toppings like shredded coconut, walnuts, or extra shredded carrots.
