1 1/4 cups Plain Greek Yogurt
2/3 cup Parmesan Cheese
3/4 cup Basil Pesto
2 cups Chicken Stock
1 cup Cherry Tomato

Ingredients

1 cup White Rice
1.5 Pounds Chicken Breasts (diced)
1 1/4 cups Plain Greek Yogurt
2/3 cup Parmesan Cheese
3/4 cup Basil Pesto
2 cups Chicken Stock
1 cup Cherry Tomato

Preparation

Step 1

Preheat oven to 350F.

Step 2

In a large baking dish, combine uncooked rice, chicken, yogurt, pesto, and chicken stock. Mix well to combine.

Step 3

Top with cherry tomatoes and shredded cheese.

Step 4

Cover with aluminum foil and bake for 35 minutes.

Step 5

Remove foil and continue baking for an additional 10-15 minutes or until the rice is cooked and the chicken is cooked through.
