Step 1
In a large saucepan over medium heat, warm 3 Tbsp of olive oil. Add the onion and sauté until softened, about 4 minutes. Add the garlic and sauté until the garlic and onions are golden brown, 1-2 minutes. Stir in the ground cumin and cinnamon. Then mix in the lemon zest and juice, dried fruits, and broth.
Step 2
Bring the mixture to a boil, reduce the heat to medium-low, cover, and simmer for 5 minutes to blend the flavors.

Stir in the couscous, cover the pan, and remove from the heat.
Step 4
Let stand until the liquid is absorbed and the couscous is softened, about 5 minutes.
Step 5
Add the cilantro and toss with a fork to fluff the couscous and distribute the cilantro. Mix in the shredded chicken. Garnish with almonds and serve.
