This is one of my “go to” quick and easy dinners. We make this year round and it’s one of those rare recipes that all six of us agree on. Sometimes we put these on hamburger buns. Sometimes I put it over a bed of leafy greens and eat it like a burger bowl. Also goes nicely straight onto the plate and served with potato wedges.

Ingredients

For the Tuna Patty:

8 (5 oz) cans Canned Tuna (in Water)
4 Tablespoons Plain Greek Yogurt (nonfat)
Juice from 1/2 lemon Lemon Juice
2 teaspoons Salt
1 teaspoon Black Pepper
2 teaspoon Garlic Powder
2 teaspoons Onion Powder
1 teaspoon Paprika
2 oz (56 g) Pretzels (finely crushed)
2 Eggs
1/2 cup Tapioca Flour
2 Tablespoons Olive Oil

For the Sauce:

2 Tablespoons Mayonnaise
1 Tablespoon Buffalo Sauce
1/2 teaspoon Worcestershire Sauce

For the Optional:

Lettuce of Choice
1 Lemons (wedge)
Bread of Choice (Hamburger buns)

For the Tuna Patty:

1/2 cup Tapioca Flour
2 Tablespoons Olive Oil

For the Sauce:

2 Tablespoons Mayonnaise
1 Tablespoon Buffalo Sauce
1/2 teaspoon Worcestershire Sauce

For the Optional:

Lettuce of Choice
1 Lemons (wedge)
Bread of Choice (Hamburger buns)

Preparation

Step 1

In a large bowl, combine all patty ingredients except the flour and oil. Once mixed, form into 12 patties.

Step 2

Combine all sauce ingredients and stir to combine. Cover and set aside or refrigerate until ready to serve.

Step 3

Heat oil in a pan or skillet.

Step 4

Dredge patties in flour and fry for 2-3 minutes per side. Place on a plate covered with a paper towel. Optional: Squeeze lemon juice over cooked patties.

Step 5

Serve hot on hamburger buns or over salad greens. Top with sauce or your favorite condiment.

Step 6

Meal Prep: Store refrigerated in an airtight container. Reheat in the air fryer for best results but the microwave works too.
