4 Tbsp Olive Oil (Divided)
2 Shallots (1/2 Cup Finely Chopped)
2 Cloves Garlic (Minced)
16 Oz Marinara Sauce
3 Sprigs Thyme
1/8 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Ground Coriander
1/4 tsp Crushed Red Pepper (More To Taste)
3/4 tsp Dried Oregano (Divided)
1 Lb Shrimp (Peeled & Deveined)
4 Oz Feta Cheese (Omit If Dairy-Free)

2 Shallots (1/2 Cup Finely Chopped)

1 Lb Shrimp (Peeled & Deveined)
4 Oz Feta Cheese (Omit If Dairy-Free)

Preparation

Step 1

Preheat oven to 400°F.

Step 2

Heat 3 Tbsp olive oil in an oven-proof skillet over medium-low heat. Add the shallots and garlic and cook, stirring occasionally, until translucent, 5 to 7 minutes. Do not brown.

Step 3

Add marinara, thyme, salt, pepper, coriander, crushed red pepper, and 1/4 tsp oregano. Bring to a boil, then reduce the heat to low and cook, uncovered, stirring occasionally, for 5 minutes.

Step 4

Remove the pan from the heat and arrange the shrimp in an even layer in the tomato sauce.

Step 5

Crumble the feta over the shrimp, and then sprinkle with the oregano and drizzle with 1 Tbsp olive oil. Bake for 12 to 15 minutes, until the shrimp are pink and just cooked. (The cooking time will depend on the size of the shrimp.)

Step 6

Turn on the broiler and broil for 1 to 2 minutes, or until the feta is golden brown in spots. Remove from the oven and garnish with chopped oregano and drizzle with olive oil.
