Ingredients

2 tablespoons Olive Oil
1 cup Yellow Onion (chopped)
1 1/2 cup Carrots (chopped)
1 pound Ground Turkey
1 teaspoon Salt
2 tablespoons Balsamic Vinegar
2 cups Marinara Sauce
3 cups Chicken Broth
8 ounces Spinach (frozen, chopped)
6 ounces Lasagna Noodles (broken into 2-inch pieces)
1/4 cup Parmesan Cheese (grated)
for serving Mozzarella Cheese (shredded)

for serving Ricotta Cheese

1 cup Yellow Onion (chopped)
1 1/2 cup Carrots (chopped)
1 pound Ground Turkey
1 teaspoon Salt
2 tablespoons Balsamic Vinegar

8 ounces Spinach (frozen, chopped)
6 ounces Lasagna Noodles (broken into 2-inch pieces)
1/4 cup Parmesan Cheese (grated)
for serving Mozzarella Cheese (shredded)

Preparation

Step 1

Heat oil in a large skillet over medium heat. Add onion and carrot and cook for 2 minutes. Add the ground meat and stir to break it up into crumbles.

Step 2

Add the meat and veggies to your slow cooker – the meat does not need to be fully cooked at this point. Add remaining ingredients through the spinach (not the noodles or cheese) and stir to combine.

Step 3

Cover and cook on high for 4 hours or on low for 8 hours. During the last 30 minutes stir in the noodles.

Step 4

Once noodles are cooked, taste for seasoning and add more salt and pepper as needed. Top with cheese to serve.
