1 Lb. Sugar Snap Pea (trimmed)
1 Tbsp. Lemon Juice (freshly squeezed)
1 Tsp. Lemon Zest
3 Tbsp. Olive Oil
1 Tsp. Shallot
1 Tbsp. Fresh Mint Leaves (finely chopped)

Ingredients

1 Lb. Sugar Snap Pea (trimmed)
1 Tbsp. Lemon Juice (freshly squeezed)
1 Tsp. Lemon Zest
3 Tbsp. Olive Oil
1 Tsp. Shallot
1 Tbsp. Fresh Mint Leaves (finely chopped)

Preparation

Step 1

Fill a bowl with ice and water and set aside.

Step 2

Bring a large pot of water to a boil, add peas and cook until tender (only 2 minutes!). Transfer to ice bath with a slotted spoon.

Step 3

Whisk all other ingredients in a large bowl. Drain peas and toss with mixture. Add salt and pepper to taste.
