One pan... need I say more? This recipe is packed with goodness, only takes 30 minutes to get on the table and did I mention you only have to clean one pan?? If that wasn't enough... it also makes enough for leftovers!

Ingredients

1 tablespoon Olive Oil
1 pound Ground Turkey
Alternative(s):
1 pound Ground Italian Sausage
1/2 Yellow Onion (diced)
3 cloves Garlic (peeled and minced)
28 oz. Canned Whole Peeled Italian Plum Tomatoes
1 teaspoon Dried Oregano
1 teaspoon Dried Basil
1 teaspoon Dried Parsley
1 teaspoon Kosher Salt (plus more for taste)
1/2 teaspoon Black Pepper (plus more for taste)
1/2 teaspoon Chili Flakes
1 cup Orzo (uncooked)
1 1/2 cups Chicken Broth
2 cups Kale (stems removed and chopped)
1 cup Mozzarella Cheese (shredded)
Fresh Parsley

Preparation

Step 1

In a deep skillet (with a lid), heat olive oil over medium heat. Add the turkey and break it up and cook until browned.

Step 2

Add the onion and garlic and cook for 2-3 minutes, stirring frequently.

Step 3

Add the tomatoes, oregano, parsley, basil, fennel, chili flakes (if you are using them), salt and pepper. Stir.

Step 4

Stir in orzo until fully incorporated.

Step 5

Add broth and stir again.

Step 6

Bring to a boil over high heat, cover and simmer on low for 15 minutes stirring occasionally.

Step 7

Once most of the liquid has been absorbed stir in the kale and top with cheese. Turn the heat off and cover for 2 minutes until the cheese has melted. Garnish with fresh parsley and serve.
