Ingredients

1 small Yellow Onion
3 tablespoons Vegetable Oil
2 Eggs
8 ounces Ground Pork
1 teaspoon Kosher Salt
1/4 teaspoon Black Pepper
2 cups White Rice (cooked and cold)
Alternative(s):
2 cups Brown Rice (cooked and cold)
1/2 cup Frozen Vegetables (peas and carrots)
2 tablespoons Soy Sauce
1 teaspoon Sesame Oil

Ingredients

1 small Yellow Onion
3 tablespoons Vegetable Oil
2 Eggs
8 ounces Ground Pork
1 teaspoon Kosher Salt
1/4 teaspoon Black Pepper
2 cups White Rice (cooked and cold)

2 cups Brown Rice (cooked and cold)
1/2 cup Frozen Vegetables (peas and carrots)
2 tablespoons Soy Sauce
1 teaspoon Sesame Oil

Preparation

Step 1

Dice yellow onion.

Step 2

Heat 1 tablespoon of the vegetable oil in large non stick fry pan. Add 2 large eggs and gently scramble until softly set. Remove from pan and set aside.

Step 3

Add the onion, ground pork, salt and pepper to the pan. Cook, breaking up the meat into small pieces, until the pork is cooked through and the onion is tender.

Step 4

Add the remaining 2 tablespoons oil and let heat for a few seconds. Add rice, frozen veggies, and soy sauce. Stir fry until the rice is heated through, 2-3 minutes. Return the eggs to the pan. Remove from the heat and stir in the sesame oil.
