2 Medium Heads Cauliflower (Cut Into Florets-About 6 Cups)
1/2 tsp Ground Cumin
1/2 tsp Smoked Paprika
1/4 tsp Ground Turmeric
1/2 tsp Garlic Powder
1/4 tsp Crushed Red Pepper
1 tsp Sea Salt
1/8 tsp Cinnamon
1/4 Cup Olive Oil

For the Creamy Cilantro Dipping Sauce:

1 Clove Garlic (Minced)
2 Tbsp Lemon Juice
3/4 Cup Plain Greek Yogurt
Alternative(s):
3/4 Cup Dairy Free Greek Yogurt
1/2 Cup Cilantro (Chopped)
1/2 tsp Sea Salt

Preparation

Step 1

Preheat the oven to 400°F. Prepare a sheet pan with parchment paper and set aside.

Step 2

In a large bowl add cumin, smoked paprika, turmeric, garlic powder, crushed red pepper, sea salt, cinnamon, and oil. Mix until the spices are fully incorporated in the oil.

Step 3

Add the cauliflower florets and toss to coat the cauliflower in the oil and spice mixture.

Step 4

Place the cauliflower florets on the prepared sheet pan in one layer and roast for about 25-30 minutes or until the cauliflower is tender and golden brown.

Step 5

While the cauliflower is roasting, mix together the ingredients for the sauce in a small bowl or blender.

Step 6

Serve the cauliflower with the dipping sauce.
