1 Yellow Squash (cut into rounds)
1 Zucchini (cut into rounds)
1 Red Onion (cut into 1-inch pieces)
1 Red Bell Pepper (cut into 1-inch pieces)
1 Green Bell Pepper (cut into 1-inch pieces)
1 ear Corn (Fresh corn - cut into 1-inch rounds)
Olive Oil (for drizzling)
Salt and Pepper

Preparation

Step 1

GRILL: Heat a grill to medium-high and spray with nonstick cooking spray.

OVEN: Preheat oven to 400 degrees F.

Step 2

Thread the vegetables onto 4 metal skewers. Drizzle with olive oil and season with salt and pepper.

Step 3

GRILL: Grill the skewers for 8 minutes per side, or until the vegetables are tender and lightly charred.

OVEN: Place skewers onto a baking sheet and roast in oven until tender – about 10-12 minutes.

Step 4

Remove from grill or oven, season to taste and serve.
