A great fresh way to enjoy summer watermelon!
Ingredients
For the Sherry Vinaigrette:
2 1/2 Tbsp Sherry Vinegar
1/8 tsp Salt
Black Pepper (To Taste)
3 Tbsp Olive Oil
For the Salad:
2 Cups Cherry Tomatoes (Halved)
1 Cup Fresh Parsley (Roughly Chopped)
4 Cups Seedless Watermelon (Cubed)
4 Oz Feta Cheese (Crumbled)

A great fresh way to enjoy summer watermelon!

For the Salad:
2 Cups Cherry Tomatoes (Halved)
1 Cup Fresh Parsley (Roughly Chopped)
4 Cups Seedless Watermelon (Cubed)
4 Oz Feta Cheese (Crumbled)
Preparation
Step 1
To make the vinaigrette, whisk the vinegar, salt, and pepper together. Then slowly whisk in the olive oil until it thickens.
Step 2
For the salad, mix everything together and top with the vinaigrette. Serve immediately.
To serve later, store in a mason jar for 2 salads (start with vinaigrette, tomatoes, parsley, watermelon, and then feta).
