Let’s talk about oatmeal… I know that those small easy packets are tempting but let me tell you, YOU can make your own oatmeal tailored specifically to each person. Think of yourself as an oatmeal buffet. Get the oats (I use the big carton of the one minute oats) in the water – then add whatever you like. Try frozen berries. Slice your apples really thin and chop into small pieces and throw them in there. Do you like nuts and raisins? Maybe add some cinnamon. Really you can’t go wrong. Throw it in the microwave for a few minutes and add your favorite sweetener – and there you go! Everyone gets what they want for breakfast and you didn’t even break a sweat!

Rainbow Salad with Orange Vinaigrette

Don’t forget about the salad! Start with the lettuce and throw all the fun things on there. I know a fresh pear or a “fancy” nut always seems to make a salad feel fresh and exciting. Sometimes I am a really cool mom and try to make a “rainbow salad” and put one thing in for every color of the rainbow! Red - Red pepper or baby tomatoes Orange - Shredded carrot Yellow - Cheddar cheese Green - cucumber or avocado Blue - Blueberries Purple - Red onions or purple cabbage
