Preparation

Step 1

Cook rice as directed. Bring rice and liquid to a boil, then cover and cook for 12 minutes.
For the instant pot, use a 1:2 ratio of rice to liquid, and set the instant pot for 12 minutes.

Step 2

While rice is cooking, prepare the corn salsa. Mix the corn, diced onions, jalapeno to taste, 1/2 Tbsp cilantro, and lemon juice. Add salt to taste. Set aside.

Step 3

When rice is done cooking, stir in lime juice (to taste), 1/2 Tbsp cilantro, and season with salt.

Step 4

Heat choice of protein. In a bowl, place the rice, chopped lettuce, and beans or chicken. Top with corn salsa and choice of toppings.
