This recipe hits the spot every time. It’s nutty, salty, spicy, full of umami and a touch of sweetness. It’s great with sweet potatoes, rice and salmon. It’s a nice change from massaged or raw kale, some pieces crisping into almost a kale chip while others take on the dressing and wilt beautifully. Kale is one superfood that will never go out of style.

Ingredients

1 Large Bunch Kale (stems removed, sliced)
1/3 C. Refined Coconut Oil (melted)
1 Tsp. Sesame Oil
2 Tbsp. Coconut Aminos
Alternative(s):
2 Tbsp. Tamari Gluten Free Soy Sauce
1 Tbsp. Sriracha
2 Tsp. Maple Syrup
1 C. Coconut Flakes (unsweetened)

Preparation

Step 1

Preheat the oven to 400°F. In a container that seals, add the oils, aminos, sriracha and syrup and shake vigorously until emulsified.

Step 2

Toss 2/3 of the dressing onto the kale and lay onto 2 baking sheets.

Step 3

Sprinkle with coconut flakes. Bake for 10-15 minutes, not allowing the kale to burn.

Step 4

Use the remaining dressing to accompany whatever you serve the kale with!
