About this Recipe

Tried and true comforting recipe with a little boost of protein from silken tofu. Great with bacon if you eat meat. Feel free to add more veggies, leave it unblended, or only blend half!

Ingredients

2 TBSP Avocado Oil
1 Sweet Onions (diced)
2 Leeks (sliced, washed, drained)
3 cloves Garlic (minced)
16 oz Tofu (silken)
4 cups Vegetable Broth
to taste Salt and Pepper
1 lb Yukon Gold Potatoes (cubed, usually 8 medium)

1 Sweet Onions (diced)
2 Leeks (sliced, washed, drained)

Preparation

Step 1

Add oil to large sauce pot over medium heat. Add onions, leeks, garlic. Cook until fragrant, about 5-6 minutes.

Step 2

Stir in potatoes and cook 4-5 minutes, until starting to soften. Stir in tofu and broth, and bring to a boil.

Step 3

Simmer for 15 minutes or until the potatoes are fully cooked. Season with salt and pepper as you see fit. Remove from heat.

Step 4

Transfer cooked soup in batches to a blender and blend on high until smooth. (Only fill the blender halfway when blending hot liquids.) Once blended, pour the soup into bowls and garnish with fresh chives and pepper if desired.
