Quinoa Breakfast Bowl

 

Ingredients:

1/2 cup uncooked quinoa

1 cup milk or milk alternative

1/2 tsp vanilla extract

1 cinnamon stick

pinch of salt

 

Directions:

1: Place quinoa in a medium saucepan. Add milk, cinnamon, vanilla and pinch of salt.

2: Bring to a high simmer and then turn the heat down, cover, and simmer for 15 minutes. Don’t check on it by opening the lid. But do watch to make sure that it doesn’t start bubbling.

3: When 15 minutes is up, remove the lid and let quinoa cool for 5 minutes.

4: Add to a bowl and top it how you please. My favorite is a sliced peach, Greek Yogurt for more protein, chia seeds, and a smidge of maple syrup!
