Are you a swim team mom, soccer mom, baseball mom, working mom, martial arts mom, or a living, breathing mom (or even just a human)? Okay…you need an Instant Pot then–stat. If you are one of those awesome Pinterest, meal-planning moms who gets their grocery shopping done on Sunday afternoon and then crafts with the kids for the remainder of the afternoon, well then, you rock. I’m not that mom. If you aren’t either, try this dinner. This took me literally 20 minutes to make–start to finish. It is so easy that it feels stupid posting this, but man, it has saved my butt a few times since swim practices have started, and I feel like everyone needs to know how easy healthy eating can be. The biggest hiccup I see in my client’s nutrition is that they eat out or eat convenience foods because they feel pressed for time in the kitchen. The struggle is real. Meal prep for me is more about having some go-to’s on-hand that I can pull together quickly. For me, it is this meat sauce, or frozen stir fry veggies and shrimp, or pulled chicken tacos. Ingredients:
2lbs ground meat of choice (I use half turkey and beef)
2 16 ounce jars of marinara sauce (preferably without added sugar)
1/2 onion finely chopped
3 cloves garlic, chopped
3 cups spinach, chopped (optional–put in at the end)
Directions:
Throw the onions and garlic in with 2 TBSP olive oil. Hit the “sauté” feature on the Instant Pot and sauté for 5 minutes. Add your meat and jars of sauce. Close lid and hit “manual + 15.” Turn off pot and allow pressure to release on its own for about ten minutes. Open, and add chopped spinach. Allow to wilt a bit. Tastes like it cooked all day! You can even do it with frozen meat.
While your sauce is cooking, make your zoodles or pasta.
