Strawberry “Shortcake” Rice Cakes

This is a perfect quick breakfast or snack! The lemon with the Greek yogurt is, dare I say, life-altering. These take five minutes to make. It is a great mix of protein and carbs!  It has just enough sweetness to pick you up. Does this taste like actual shortcake? No. Um, it is a rice cake, you guys. Is it quick, good, and nutritious…um, yeah.

Ingredients:

2 rice cakes

1/2 cup plain greek yogurt (2 percent or whole milk preferably)

1/2 lemon (zest and juice)

1/4 tsp liquid stevia*

1 cup chopped strawberries

*If you don’t like stevia, you can substitute with honey to taste.

 

Directions: 

1: Mix Greek yogurt, 1/2 lemon juice (or to taste), grated zest from 1/2 lemon, and the stevia (and more if you like sweeter) in a small bowl.

2: Chop strawberries.

3: Spread yogurt mix over rice cakes. Top with strawberries.
