HEALTHY 4 INGREDIENT, NO-BAKE PEANUT BUTTER BARS

AKA–The only food I’m currently consuming with all this stress. 
These are vegan, gluten free, and so stinking easy to make! You can also make them keto or paleo if you sub the oat flour with almond or coconut flour. You do you, boo!
I don’t share a whole lot of food recipes, because you guys…I just can’t bring myself to crunch up little pieces of chocolate, or go pick some pretty flowers to put on a perfectly arranged plate, or drizzle some beautiful sauce in the shape of a heart. I am so not Pinteresty. But, this recipe is too good, and too simple not to share in a time when peanut butter brings a little warmth to the darkness.
All you need is:
Peanut Butter (or another nut butter), 1 cup
Oat Flour (or almond flour), 1/2 cup
Maple Syrup (the non gross kind), 1/4 cup + 2 TBSP
Chocolate Chips, 1 cup
How to make:
Stupid easy, you guys. Simply mix the peanut butter, flour and maple syrup together. I use a food processor to really get it mixed nicely! Add a spray of non-stick cooking spray or lay down some parchment paper. I used a 6×8 food storage container with one of those snapping lids. Spread out the peanut butter mixture. Then, place the chocolate chips in a bowl and microwave in 30 second increments, stirring thoroughly each time. It will probably take 1.5-2 minute of microwave time, but you need to stir every 30 seconds so they don’t burn. Spread over the top of the peanut butter and then pop the tray into the freezer if you are impatient, or the fridge.
These store nicely for quite some time.
