Have you ever roasted veggies? If not, I’m about to change your life and your relationship with vegetables. So easy, and really brings out incredible flavor. You can do this with quite literally ANY vegetables. Eat the rainbow! You can do just one veggie, or use variety. I’m telling you–no rules here.


Brussel sprouts



Bell Peppers

Cherry tomatoes

Red Onion

(or literally any vegetable!!)

2 tbsp Avocado or Olive Oil




1: Set oven to 425 degrees.

2: Generously coat veggies with oil. Salt and pepper to taste.

3: Roast for 20-30 minute or until you can pierce with a fork, and veggies look slightly crisped.

It is THAT easy, and the flavor is so much better than steamed veggies. Just sayin’!
